I love to make doughnut at some my weekend because it's fun and challenging, sometime It's hard to measure the ingredient and knead the sticky doughnut, and sometime feel easier when the doughnut is already cooked. here the recipe that I get from howcast with some arrangement(improvement?) from me
2 tbsp yeast
1 cup warm water
1 cup all-purpose
1/3 cup unsalted butter
1/3 cup shortening
2/3 cup confection sugar
3 eggs
1 tsp salt
3 ½ cup bread flour (high protein flour)
Frying oil + shortening
I always measure all of the ingredients with this metric glass, and is easier rather than you scale it with weight scales. And I like to convert the measure in this site http://www.jsward.com/cooking/conversion.shtml
Directions
1. Soak the yeast with the warm water for 10 minutes and add 1 cup all purpose flour
2. In the other large bowl, mix the unsalted butter , confection sugar, eggs and salt together, then put in the bread flour and stir them.
3. Then put in the yeast to the large bowl, and knead the dough until not sticky again. And let stand it for one hour.
4. Roll the dough and cut it
5. Fry the dough in the hot frying oil+shortening
Tips
-the hardest part is when you knead the sticky dough, you must knead the dough well, I even slash hard the dough. Ready dough is signed with net dough when you pull out it.
-when I roll the dough, I add the flour into the dough to make it easier cutting, I use doughnut cutter to make the pretty shape.
-I use shortening to make the doughnut dry(not oily) and crunchy .
